Tropical Grilled Salmon with Mango Salsa

1-1/4 cup Annie's Naturals Organic Baja Lime Marinade
1-1/4 lbs. fresh salmon fillets or steaks
8” x 10” sheet of tin foil

1/4 cup Consorzio Mango Fat-Free Dressing
1 cup mango or papaya, chopped
1/2 cup avocado, chopped
1/4 cup red bell pepper, chopped
2 Tbsp. fresh cilantro, chopped
1 tsp. salt
1 tsp. lime juice
1/8 tsp. ground cumin
1/8 tsp. ground red pepper



1. Marinate salmon for 30 minutes in Annie's Naturals Organic Baja Lime Marinade. Remove from marinade.
2. Place salmon on tin foil. Fold the edges to keep marinade from running out of foil pan.
3. Grill or broil salmon for 10 minutes (or until fish flakes easily and is still pink in the center). Baste often during first 5 minutes. Discard excess marinade after use.

Salsa Directions:
1. In a medium bowl, combine all remaining ingredients. Mix well.
2. Cover and refrigerate 30 minutes. Serve over salmon on a bed of butter lettuce. Enjoy!
